Gloomy


It has been exceptionally dark and gloomy around here lately. I am looking forward to seeing the sun again soon. So, when the weather is cold and gray, I bake. I decided to try and turn the ingredients above into a bread. It just came out of the oven, but it is too dark to post a pic. I will follow-up with a photo of the finished product as soon as I am able. Here is the recipe. It turned out pretty tasty.
Sweet Potato-Zucchini Bread
Makes 8 servings (1 loaf)
2 c sugar
2 t ground cinnamon
1 t baking soda
1/2 t baking soda
1/4 t baking powder
1/4 t salt
2 c sugar
3/4 c vegetable oil
3 large eggs
1 t vanilla extract
1 1/2 c grated zucchini
1 1/2 c grated sweet potato
Preheat oven to 350 degrees. Butter and flour a 9 x 5 x 3 inch loaf pan. In medium bowl, sift first 5 ingredients; set aside. In large bowl, beat sugar, oil, eggs and vanilla until well blended. Mix in grated zucchini and sweet potato. Add dry ingredients; stir well. Transfer batter to prepared pan. Bake until toothpick inserted into center comes out clean (about 80 minutes). Cool bread in pan on rack 15 minutes. Cut around loaf to loosen from pan. turn onto rack. Cool completely.
