Soup Weather



An arctic front has weaseled its way down from Canada and will stay here for a few days. That means only one thing...the beginning of soup weather. I found these leeks at the farmer's market last weekend so I decided to try some potato and leek soup. I sort of combined a couple of recipes to make the one below.

Potato and leek soup
1T butter
1T olive oil
3 leeks, washed and sliced
3 cloves garlic, chopped
4 c chicken broth (you could use vegetable or water)
1/2 c white wine
1 lb potatoes, peeled and cubed
2 bay leaves
salt for seasoning
In a large pot, heat butter and oil. Add leeks and salt. Cook until soft and wilted. Add garlic and cook for an additional minute or so. Pour in stock and wine. Add potatoes and bay leaf. Cover and simmer until potatoes are tender. Remove bay leaf and blend soup with immersion blender until smooth.
