Thanks to Ilva at Lucullian Delights, I decided upon this lovely recipe for my rather large and beautiful eggplant. Please excuse the photography. It is overcast and muggy today and I only have my point and shoot. Though I have never met Ilva I feel like she takes me back to Italy everyday. Her use of simple ingredients to create some very tasty Italian dishes keeps me coming back. She is currently on vacation in her native land of Sweden (where I have never visited). Everyday is like a quick visit there for me. Thanks, Ilva!
